9. Happy New Year

Dear Fans,

It is close to the last day of the year. The parties are practically over...the carols have been sung, the presents have been presented and the New Year is about to begin. It's a time to reflect a little, to promise a little. It's a time to hope a little...that the New Year brings peace to our earth and good will to all men. I wish you all a very Happy and Healthy New Year.

These are two glorious chocolate masterpieces, that can be assembled in minutes, and only look as if they took all day to prepare. My 2-Minute Chocolate Soufflé will truly amaze you and served with the Vanilla Crème Fraiche is a total delight. My 1-Minute Chocolate Fudge Gateau is one of the finest tasting chocolate cakes. Topped with the Chocolate Buttercream will please the most ardent chocolate lover. I know you will love the fact that they can be prepared in minutes ... literally.

2-Minute Chocolate Soufflé 

Imagine preparing a soufflé by blending a few ingredients for 2 minutes.

  1 1/2        cups semi-sweet chocolate chips
        1        cup heavy cream

      5           eggs, at room temperature
     1            package (8 ounces) cream cheese, at room
                         temperature,  and cut into 8 pieces
                   pinch of salt
    1             teaspoon vanilla

Place chocolate chips in the bowl of a food processor. Heat the cream to boiling point and pour it into the bowl. Blend for about 10 seconds, or until chocolate is melted. (Do this carefully, so that the hot cream does not splatter.) Beat in the eggs, one at a time, until blended. Add the remaining ingredients and blend for about 1 minute.

Carefully divide the mixture between 6 (8-ounce) ramekins and place ramekins on a cookie sheet. Can be held in the refrigerator at this point. Remove from the refrigerator about 10 minutes before baking. Bake at 375 for about 20 minutes. Serve with Vanilla Crème Fraiche over the top. Serves 6

Vanilla Crème Fraiche:
            1/2          cup cream
            1/2          cup sour cream
            1             teaspoon vanilla
            1             tablespoon sugar

Stir together all the ingredients until blended. Allow to stand at room temperature for 1 hour, and then refrigerate. This can be prepared several days prior to serving and stored in the refrigerator, covered. Yields 1 cup.


One-Minute Chocolate Fudge Gateau with
Chocolate Buttercream

There are few desserts you can make that are simpler or better-tasting than this one. This cake is prepared by blending all the ingredients for 30 seconds and it's ready to bake... that's all there is to it. This is a low cake, so don't think anything went wrong.

            5            eggs
            1 1/4       cups sugar
            1 1/3       cups walnuts
            1            teaspoon vanilla
            4            tablespoons flour
            4            tablespoons cocoa
            1            teaspoon baking powder

Place all the ingredients in a food processor and blend for 30 seconds, or until the nuts are very finely ground. Pour batter into a 10-inch greased springform pan and bake in a 350° oven for 30 minutes, or until a cake tester, inserted in center, comes out clean. Allow to cool in pan. When cool, remove from pan, place on a beautiful cake plate, and swirl with Chocolate Buttercream on the top and sides. Serves 8 to 10.

Chocolate Buttercream:
            1/2          cup semi-sweet chocolate chips, melted
            1/4          cup butter, melted
            1             teaspoon vanilla

In a bowl, stir together chocolate and butter until blended. Stir in vanilla.
