A Dish Should not Promise More Than it Can Deliver ... 

A dish should not promise more than it can deliver. Did you ever see a pastry cart, laden with the most delectable looking pastries? Then comes the agony of decision. What to choose? ... the chocolate petit four, the raspberry roll, the éclair with the rosettes on top? Then one bite and the music goes out of the day. You feel let down. The taste never delivered what it promised.
Well, our recipe today is just the opposite. It starts with simple everyday ingredients, takes minutes to assemble, promises little but delivers one of the finest tasting nut pies. It can be made ahead and it freezes beautifully. It was created and designed to fit your busy schedule. Garnish the pie lavishly and serve 6 or 8 with pride. Marvelous dessert, for family dinners or dinner parties. Some of our friends said they would not leave our home without this recipe. So, I hope you enjoy it as well. This is one of our very favorites.
I recommend using a porcelain pie baker. It allows you to bake and serve in the same dish. I have porcelain bakers in every size and shape, and I can never be without them.

Nutcracker Pie with Simple Whipped Cream

3 egg whites
1 cup sugar
22 Ritz crackers, coarsely crumbled (1 cup)
1 cup walnuts, coarsely chopped
1 teaspoon vanilla  

In the large bowl of an electric mixer, beat egg whites until foamy. Beat in sugar, 1/4 cup at a time until whites are stiff and glossy. With a large spoon, stir in remaining ingredients and mix until crumbs are nicely coated.
Spread mixture evenly into a greased 9-inch porcelain pie baker and bake in a preheated 350-degree oven for 35 minutes or until top is lightly browned and a cake tester, inserted in center comes out clean. Allow to cool in pan.
When cool, spread Whipped Cream evenly on top and garnish with a sprinkle of chopped walnuts. Refrigerate for at least 4 hours. Overnight is better. Serves 6 to 8.

Simple Whipped Cream:
1 cup whipping cream
1 tablespoon sugar
1/2 teaspoon vanilla

Beat together all the ingredients until cream is thick. Do not overbeat.
To Make Chocolate Chip Nutcracker Pie:
Stir in 3/4 cup chocolate chips with the crackers. Proceed as described. Decorate top with a sprinkle of chopped chocolate chips.
To Chop Chocolate Chips:
Place chilled chocolate chips in your food processor and pulse for a few seconds until chocolate is chopped.
To Make Apricot Nutcracker Pie:
Stir in 1/2 cup chopped dried apricots with the crackers. Proceed as described.
