A Delicious Bread

Dear Fans,
Today I have a treat in store. I am going to share with you one of the most exciting soups...A Mexican Chicken Chile Soup with Rice and Beans, that is so delicious, and so satisfying.  It is one of the best, I promise you.  And as an accompaniment, a fabulous Mexican Corn Bread, that is truly delicious. Together, they can serve as a total meal.

Baking bread is one of the true joys of the culinary experience. Baking bread has a magic all its own. Starting with the simplest of ingredients and seeing how they transform into loaves, is a little short of a miracle. The aroma of bread, baking in the oven, fills a home with love and warmth.

And soup...soup is the stuff memories are made of.  I cannot recall ever having met a single person who did not love soup.  And, also, the fragrance of soup, simmering on the stove, assures you that love is very close by.

Easiest and Best Crusty Cornbread

 


Mexican Chicken Soup with Rice and Beans &
 Garlic Cheese Tortillas

This is a delicious soup, very new and different.  It is a medley of Mexican tastes and flavors.  It is also very hearty, and will serve well as a complete meal.  My Easiest & Best Cornbread is another lovely accompaniment. This is a great soup to consider if you have leftover chicken.

2 medium onions, chopped
8 cloves garlic, chopped
1 can (1 pound) stewed tomatoes, chopped and not drained
1 can (8 ounces) tomato sauce
3 cans (10 1/2 ounces, each) chicken broth
1 can (7 ounces) diced green chiles
1 tablespoon Chili con Carne Seasoning (Spice Islands)
1 teaspoon Turmeric seasoning
1/4 teaspoon ground cumin
salt and pepper to taste
1 can (1 pound) red kidney beans, rinsed and drained

1/2 cup rice or orzo (rice-shaped pasta)

3 cups cooked chicken cut into 1/2-inch pieces

In a Dutch oven casserole, place all the ingredients except the chicken. Bring mixture to a boil.  Lower heat and simmer soup, with cover slightly ajar, for about 30 minutes, or until vegetables are tender and rice is soft. Add the cooked chicken and heat through.  Serve with Garlic Cheese Tortillas or Easiest & Best Cornbread.  Serves 6.

Note:- Soup can be prepared earlier in the day or 1 day earlier and stored in
           the refrigerator.  Heat before serving.

Garlic Cheese Tortilla Chips:
6 corn tortillas 
melted butter
garlic powder
6 tablespoons grated Parmesan cheese

In a 12x16-inch baking pan place tortillas.  Brush tops lightly with melted butter and sprinkle very lightly with with garlic powder, and 1 tablespoon of cheese.  Bake in a 350° oven for 15 minutes, or until cheese is bubbling and top is lightly browned/  Careful, as there are only a few seconds between browned and burnt.  Serves 6.

Easiest and Best Crusty Cornbread

This is a basic cornbread, just right for serving with chili, chili soups or chili stews.  It is deliciously crusty, and bursting with flavor.

1 cup cornmeal
1 cup flour
1/2 cup sugar
1 tablespoon baking powder
1/4 teaspoon salt
1/2 cup butter (1 stick), cut into 8 pieces

1/2 cup sour cream
1/2 cup milk
1 egg

In the large bowl of an electric mixer, beat together first 6 ingredients, until the mixture resembles coarse meal.  Beat together the sour cream, milk and egg until blended.  Pour this mixture into the mixer bowl and beat, until dry ingredients are moistened and mixture is blended, about 30 seconds to 1 minute.  Do not overbeat.

Spread batter evenly into a greased 8-inch square baking pan with a removable bottom, and bake at 375° for about 30 minutes, or until the top is golden, and a cake tester, inserted in center, comes out clean.  Allow to cool in pan.  When cool, cut into 2-inch squares.  Serves 8.
