Dear Fans,

You'll never, never have to say you're sorry.... for serving your family or friends left-over chicken or turkey. This is especially true when you sparkle it with apples, lavish it with sour cream and spice it with exotic curry. Enhance it with Rice India and Voila! you have a dinner party.

The technique used in making the rice is not exactly ordinary, but the results are extraordinary. Follow the simple instructions and you'll have perfect rice every time.

Chicken or Turkey Curry with
Apples & Sour Cream

1 onion, chopped
1 clove garlic, minced
4 tablespoons butter

2 tablespoons flour

2 teaspoons curry powder or to taste
salt and pepper to taste
1 apple, peeled, seeded and grated
1 tablespoon brown sugar
1 cup chicken broth

1 cup sour cream
3 cups cooked chicken or turkey, cut into chunks

Sauté onion and garlic in butter until onions are golden, but not brown. Add flour and cook and stir for a minute or so. Add seasonings, apple, sugar and broth. Cook over low heat, stirring, until sauce thickens. (If sauce is too thick, add a little extra broth.) Taste for seasonings, Add chicken or turkey and sour cream and heat through. Do not overheat. Serves 6.

Rice India with Raisins & Almonds

2 tablespoons oil
1 1/4 cups long-grain rice

3 cups chicken broth
1/2 teaspoon curry powder
3 sprinkles coarse ground garlic powder
salt and pepper to taste

1/2 cup golden raisins, plumped in hot water for 10 minutes, and drained
1/3 cup toasted slivered almonds


In a saucepan, stir rice and oil until rice is evenly coated. Stir in next four ingredients, cover pan, and simmer mixture for 30 minutes, or until liquid is absorbed and rice is tender. Before serving, stir in raisins and almonds.

Note: If you make this rice earlier in the day, do not add almonds in advance. Raisins are ok to add before, but almonds can get soggy and are not acceptable. So, stir in the almonds just before serving.

To Toast Slivered Almonds:
Place slivered almonds in one layer in a metal baking pan. Bake at 350° for 6 minutes or until just beginning to take on color. Remove from the oven and allow to cool.


To Toast Whole Almonds:
Same as above, but bake for 8 minutes or until just beginning to take on color. Careful not to overbake.
