The popularity of Mexican food has spread from coast to coast. This menu contains some of the popular dishes and, at best, it is the tip of the iceberg. All of the dishes are spicy, but none are very hot.
Margueritas are delicious with the different Starters. Most restaurants serve Fresh Tomato Salsa with corn chips at the beginning of the meal, but the layered Mexican Dip or one of the guacamole recipes would be a good choice for home entertaining. Mexican Corn & Chile Soup with Tortillas with Tomatoes & Cheese is a great soup course. Two exciting colorful rice recipes; the Tamale Casserole pairs well with the Red Beans & Pink Rice, as does Chili con Carne with Golden Mexican Rice. The Red Hot Lentil Chili with Mexican Cornbread is a nice change from chili beans.
