The Sensible Way to Stay Slim & Healthy

Sample Recipe:

Mexican Chicken & Chili Bean Soup

Delicious and nutritious!

1 fryer chicken (about 2 1/2 pounds, cut into serving pieces and sprinkled with garlic powder, pepper and paprika)

2 onions, chopped
1 can (1 pound) stewed tomatoes, chopped. Do not drain.
6 cloves garlic, minced
1 can (8 ounces) tomato sauce
4 cups chicken broth 1 can (7 ounces) diced green chiles
1 can (1 pound) red kidney beans, rinsed and drained
1/4 cup raw rice or orzo
1 tablespoon chili powder (or more to taste)
1 teaspoon ground turmeric
1/2 teaspoon ground cumin
black pepper to taste
3 sprinkles cayenne pepper

In a 9x13-inch baking pan, roast chicken in a 350-degree oven for 45 minutes or until practically tender. Meanwhile, in a Dutch oven casserole with the cover slightly ajar, simmer together the remaining ingredients for 30 minutes. Add the chicken, cut into bite-size pieces, discarding skin, bones and fat in pan. Continue to simmer for 15 minutes, or until chicken is very tender. Serve with 1 teaspoon of grated Parmesan cheese (add 7 calories) (optional) on top. Serves 6 as dinner or 12 as a first-course.

A Few of the

Low-Calorie Chili Beef with Red Beans & Pink Rice?...

or Diet Vegetable Paella with Artichokes & Yellow Rice?...

or a skinny Jambalaya Creole with Shellfish or Mediterranean Pizza or Pasta?...

or a low-calorie Orange & Walnut Torte or Lemon Cheesecake with Strawberry Sauce that is low-fat and low-cholesterol that you can enjoy with a good conscience?

No Way!, you say. But it's true and that is what Renny Darling's "Moderation Diet.." is all about.

It is about good healthy food, that is both satisfying and pleasurable and is also low in calorie, fat, cholesterol, sodium and sugar content. It is a cookbook that carefully follows the guidelines of The Surgeon General's Report on Nutrition and Health...yet the recipes are so delicious, you will never miss the fat and cholesterol. It is a new cookbook that stresses "Moderation and Common Sense" and a healthy way of eating for as long as "the recipes give you pleasure."

IT IS NOT A DIET YOU WILL GO "ON"--(for this implies that it is something you will eventually go "off")--but a cookbook that will offer delicious food, for an everyday life-style, that will keep you slim and healthy.
